  • Ingredients:

    The Filling:

    1lb ground turkey

    1lb ground turkey sausage

    1 large container of mushrooms

    ½ sweet onion

    2 cloves garlic

    1 jar good marinara sauce, no sugar added

    Pre-heat oven to 350

    Saute onions, mushrooms and garlic until softened.

    Add sauce and simmer for 10 minutes.

    Hollow out peppers and place on cookie sheet.

    Fill peppers and top with parmesan cheese.

    Cook for 30 min.

  • Ingredients:

    3 Chicken Breasts

    3 pieces pancetta

    1 zucchini

    1.5 c cherry tomatoes

    ¼ red onion

    2 tbsp capers

    4-5 sun dried tomatoes chopped

    3-4 chopped basil leaves

    Marinade:

    ¼ olive oil

    Juice and zest of 1 lemon

    2 tbsp fresh rosemary - 1 tbsp of dried rosemary

    2 cloves garlic

    1 tbsp basil

    Use a gallon plastic bag to place chicken in and pound out so it's all the same thickness. Whisk up all marinade ingredients in a bowl. Place all 3 pounded out chicken breasts in a plastic bag and dump marinade into the bag. Marinade for at least one hour.

    Preheat the oven to 375.

    Chop up all veggies, sun dried tomatoes, capers and basil leaves and place in a bowl, add 2 tbls olive oil and salt and pepper to taste.

    Spray 9 x 13 baking pan with non-stick spray.

    Place chicken breasts in a pan and top with pancetta.

    Pour veggies on top of chicken and pancetta.

    Bake for 40 minutes or until done

  • Ingredients:

    1lb Green Beans

    16 oz mushrooms

    Half stick butter

    2 tbls. Avocado oil

    1 c. Chicken stock

    1/2 c. Sour cream

    1/2 c. Half and half

    2-3 tbls flour

    1 tbls thyme

    1 tbls chopped garlic

    1 tsp cayenne pepper

    1/2 tsp nutmeg

  • Ingredients:

    2 packages of chicken thighs

    1 bottle of franks wing sauce

    Cajun seasoning (for the chicken thighs and a little for the sauce)

    1/3 c balsamic vinegar

    1 tbls honey
